  • 400g light mascarpone
  • 1 whole egg
  • 50g coconut sugar
  • 50g almond milk
  • 70g cornstarch
  • 2 teaspoons baking powder

Preparation and cooking

  1. Preheat your oven to 160°C.
  2. In a bowl, put the light mascarpone and soften it with a fork.
  3. Then add the egg, coconut sugar, cinnamon, baking powder, cornstarch and almond milk.
  4. Use an electric whisk to mix all the ingredients well until you get a thick, lump-free cream.
  5. Wash and peel your apples, then cut them into thin slices.
  6. Pour the preparation into a pie mold previously buttered or lined with parchment paper.
  7. Arrange the apple slices on top of the pie.
  8. Bake for about 40 minutes and you’re done!
